Although I didn’t take Ellie to the women’s march in Chicago today, we did go for a walk so we could have our own march on this beautiful day.
Pardon the scowl. She just woke up from a nap.
I march because I work too hard and won’t let anyone bring me down because I’m a woman. And I won’t allow it for my daughter either. I want her to grow up in a world where opportunities are endless, and she feels happy, strong, confident, optimistic, and empowered to be her best self and achieve greatness.
I am so excited and grateful for all who marched for me and so many others today. I am grateful that I am surrounded by so many wonderful women in my life, in my family, my circle of friends, and at my workplace.
Just this week, I went to an event for work to support the march, sponsored by GoAbroad.com and the International TEFL Academy. It was a great gathering to empower and support women and international education.

I’m constantly looking for easy breakfast recipes–that are adult AND/or kid friendly–because I usually end up having yogurt with fruit or honey during the weekdays.
Right after I gave birth to Ellie, my sister-in-law shared this delicious Food Network recipe for overnight oats, and it’s become a treat for me.
At the time, I’d never had cold oats before. It does seem a little strange at first, but this couldn’t be easier and tastier! I made some this weekend, and wanted to share.
It got me thinking about other easy breakfast options. I am not a morning person and never have enough time.
I’ve become a big fan of quiche. With store-bought crust, of course. Quiches are great because the whole family can eat, and you can easily add veggies like spinach or peppers to it.
Ellie has a pretty solid rotation of eggs (she ate three plus fruit yesterday!), Greek yogurt with natural applesauce, and Earth’s Best Organic blueberry waffles or pancakes. Any and all with fruit–her favorite! She just started having Cheerios with milk, too, which she thinks is pretty fun because she loves using a spoon.
When I have ripe bananas (often), I’ll make two-ingredient banana pancakes with cinnamon or these flavorful pumpkin banana muffins.

I LOVE newborns. The way they are so serene when they sleep. How they smell. How they look at you. It makes my heart sing.
As crazy (understatement) as that time is when you first welcome your baby to the world, it’s also amazing and beautiful and miraculous and one of a kind and way too short.
I’m waiting (not patiently) for some sweet babies to make their arrival. (Not mine, just to be clear!) Come soon, will you?
